Pulled pork, cabbage and arugula salad is made from, you guessed it, pulled pork, cabbage and arugula along with shredded carrot, cilantro and sliced almonds. This hearty and filling salad is drizzled with a tangy and spicy Citrus Lime Vinaigrette for an extra kick of flavor.
Pulled Pork, Cabbage and Arugula Salad
The impetus for this salad was me trying to get creative with what to do with my leftover slow cooker pulled pork. Most people make sandwiches with pulled pork, but I wanted a healthier, more nutrient-dense option.
I’d already whipped my Spicy Pulled Pork Fried Eggs for breakfast (so yum!) but wanted a recipe appropriate for lunch and dinner.
With cabbage, arugula and carrots in my fridge, this salad virtually made itself and came together quickly, just by way of my Winter Meal Prep leftovers. All I had to do was whisk together the Citrus Lime Vinaigrette and chop up some fresh herbs. So easy!
A Hearty and Filling Salad Recipe
The great thing about this salad is that it’s hearty and filling. It’s perfect those cold winter months when you’re using your slow cooker more often and you can use warm or cold pulled pork in this recipe.
Cabbage is a great winter vegetable and strong enough to hold up to all the flavors from the marinated pulled pork and spicy Citrus Lime Vinaigrette. Bonus – the heartiness and durability of the ingredients in this salad mean you can make it ahead of time and it won’t wilt down too much.
In fact, I think this salad recipe is one that gets even better after it’s had time to sit. The jalapeno, lime and cilantro from the vinaigrette meld beautifully with all the other ingredients. It’s tasty, flavorful, filling and an all-around great main course salad recipe. Enjoy!

So delicious and includes essential protein, fat and fiber. Amazing!!
Hi Shauna – I’m glad you love this pulled pork salad!
Is the pulled pork to be hot, warm or cold? i’m guessing the veggies are all raw and cold.
It’ll taste better if the pulled pork is warmed up before tossing it into the salad.
Made this today and it was so delicious I went back for seconds! The little bite of the serrano chili (I used instead of jalapeno) in the dressing was perfect. It was all simply delicious. That salad would be good for vegetarians too I think. Just throw in some black beans instead of the pork? Thanks for sharing this goodness with us. Muy rico!
This was a delicious and substantial dish that our family loved! And the citrus vinaigrette woke it up with a bright zing! Perfect for a cool, substantial dinner on a hot night!
Happy to hear you loved this pulled pork salad!
This is delish! I typically do not like salads- but this might make me become a salad lover.
The pulled pork definitely amps it up!
This was a fabulous weekday meal! We used our left-over Slow Cooker 5 Spice Pulled Pork for this recipe and it was exceptional!
Happy to hear you enjoyed this recipe Annita!
I made the pulled pork recipe last night and had this salad today with leftovers. It’s outstanding!!! Colorful, flavorful and perfect! Thank you for another great one!
Wonderful! Glad you loved this salad recipe
Such an easy, delicious and versatile dish. And I love the crunch of the almonds. Since the pulled pork is meal prepped, this salad is done under 10 minutes. Just how I love it ;-)
First time adding in pulled pork to a salad and it did not disappoint! So delicious!
Hi Saskia – The pulled pork definitely adds tons of flavor to a simple salad!
This was a really hearty, crunchy salad that hit the spot! I added green onions since I had them on hand and think it complemented nicely! Loved this as a way to use the pulled pork I made that was really veggie focused.
Hi Aimee – This salad is a great way to use up your pulled pork you made :) Glad you enjoyed this combination!
Marvellous! Very friendly to substitutions, too (I used different greens and nuts… still awesome)
Fantastic! I’m glad you loved your spin on my pulled pork salad, Michelle. :)
I didn’t think I’ll be able to eat on my prepped pulled pork for one more day in a row, but I still gave this salad a try. And I’m sooo glad I did. this is fantastic and I’ll keep on remaking it for quite some while.
I used pine nuts instead of almonds, because that’s what I had at home and it was delicious!
Awesome! So glad you enjoyed this pulled pork salad recipe Katie! And you can freeze that pulled pork as well. Just so you know for the future. :)
Hey Lisa,
I’m on vacation and don’t have access to a slow cooker to make the pork. Any tips on cooking the pork in a conventional oven?
Thanks.
Hi Barbara – Unfortunately I don’t and this recipe was written specifically for the slow cooker. But I’m sure you can find alternative recipes online. :)
Hi Lisa, I love all your recipes and images. Can you please share any tips you have for optimizing your site speed with large images?
Thanks Shana! You mean my website site speed? I’d recommend compressing your images for web and having a really good host. Both of those affect speed. :)
Thanks for your response, Lisa! Yes, I am talking about website speed. I just launched my vegan food blog and I realize my site is moving a little slower than I would like. I have a WordPress site. Thanks for the tips and much success to you;-)
