Golden Beet, Carrot and Turmeric Smoothie

This is one power packed, vision-boosting, gut-healing golden beet, carrot and turmeric smoothie. It’s loaded with beta carotene and nutrients.
I am in love with golden beets. Like, seriously in love. And how I’ve never really eaten these until recently will remain a mystery.
I love red beets as well, but golden beets do have one massive brownie point over red beets – they don’t stain your hands, clothing, hair, carpet, et all…RED! Sure, you might still get a smidge of yellow stain if you’re not careful, but it’s hardly noticeable. A far cry from the red I’m usually covered in. What can I say, I’m a bit of a klutz in the kitchen.
But I do have one other selfish reason to love golden beets – their golden color means they’re packed with minerals and nutrients (like beta carotene) that help with vision. It’s the same reason why carrots are good for eyesight, lots of beta carotene. And my vision, well, let’s just say it’s less than stellar. Perhaps I can blame it on the fact that I stare at computers and electronic devices all day long (a definite contributor to bad eyesight)…but let’s be honest, the reality is I’m getting older. Eeek! In fact, I’ve got a birthday just around the corner.
So while I attempt to age gracefully, I’m gonna be downing this vision-boosting, gut-healing smoothie. And the gut healing bonus is thanks to the turmeric. Turmeric is one of the most well studied medicinal herbs for its anti-inflammatory and gut sealing and healing properties. It truly is a wonder herb!
In fact, when I was in Bali and got accidentally glutened, one of the first things I did was down a large Jamu turmeric juice from a local health food shop. That helped my gut to heal, along with the activated charcoal, enzymes and loads of water and rest.
But please don’t wait for an “incident” to drink this golden beet, carrot and turmeric smoothie. It’s a power-packed smoothie will numerous health benefits that should keep it on regular rotation in your kitchen. Your gut will be happy. Your eyes will be happy. And your unstained hands will be happy. That sounds like smoothie home run to me!

Golden Beet, Carrot and Turmeric Smoothie
Description
Ingredients
- 2 golden beets, chopped
- 1 large carrot, chopped
- 1 banana, peeled, sliced and frozen
- 4 mandarin oranges, peeled
- 1 lemon, juiced
- 1/4 tsp turmeric powder
- 1 1/2 cup cold water
Optional Topping
- grated carrot
- hemp seeds
Instructions
- Add all ingredients into a high-powered blender and blend until smooth.
- Pour into glasses and add any optional toppings.

So, the carrots and beets are uncooked? correct?

Loved this! I had a giant bag of beets I roasted for another recipe and had 5 left over – was able to use them here. I could definitely taste the earthiness of the beets, but it was balanced by the sweet citrus (but not too sweet)! Thank you.

I made this today, it was my first time making a smoothie with vegetables. I only had regular colour beets, so it was pink, but it didn’t spoil it. It was amazing, I’m going to be looking for more things like this. Thanks for posting

My body needed a good dose of vitamin C and I wanted something with turmeric. Of course I can always rely on Lisa to have a recipe. I searched turmeric and found this smoothie which I thought would be perfect in this hot and humid summer weather. So refreshing and there are so many layers of flavor. I used the Ninja and it worked well enough aka produced a slightly chunky smoothie ; )

Do you use roasted yellow beets for this smoothie or raw ones?
I used raw golden beets (yellow beets). But you could use roasted ones as well.
I really enjoyed this smoothie! One thought: even with the frozen banana it was rather room temp so I would suggest having all of the ingredients chilled in the fridge first. My only question is for someone like myself who suffered from gestational diabetes during pregnancy and is trying to keep away a type 2 diagnosis, is there a concern of sugar content with this smoothie? And what would you suggest to help with that? Add fat? Thanks!
Unfortunately, I’m unable to provide any medical guidance or advice as to a concern with the sugar and diabetes as that’s a very individual question. :)
