Coconut Chia Mango Popsicles

These coconut chia mango popsicles are my new favorite popsicle. They’re healthy, vegan, naturally sweetened and perfect for kids and adults alike.
Talk about a whirlwind week! Last week I flew from Los Angeles to Lisbon, with the primary goal (initially) to attend a food photography workshop in Porto Covo with the fabulous Marta and Sanda. Two amazing photographers with very distinct styles…which of course, was all part of the allure (I’d have twice as much to learn!).
But before I even got to Porto Covo I fell head over heels in love with Lisbon. It was love at first sight. I had one day in the city before heading south for the workshop and it was just enough to wet my appetite for more of, well, everything. Sights, food, history, architecture and adventures. So here I am, back in Lisbon (for two whole weeks!)…in my happy, roaming free travel place.
Surrounding yourself with like-minded people is something I’ve talked about before, but it’s adventures like these that really emphasize the level of importance it must have in your life. As in, definite non-negotiatable. People who support your goals and dreams…even if you yourself aren’t quite sure what they are just yet. And believe me when I say, my dreams and aspirations seem to change weekly (well, probably even daily).
What I do know is that I really like photography and I’m enjoying it more than I ever imagined I could. And I find myself wondering….could this be a career? Like really?! So I surround myself with others who are doing just that. Not to mention, they’re kinda cool peeps, these food blogger/photographer gals.
Anyhoo, I made this coconut chia mango popsicle recipe (and the next 4!) before I left Los Angeles for Portugal so that I could enjoy traveling and exploring the countryside without the stress of recipe creation. Yep, I’ve learned a thing or two with my overseas travels in the last year. And given that it’s a sunny day both in Lisbon and Los Angeles, these mango popsicles couldn’t be more perfectly timed.
Besides, you know I love mango anything. Like a mango smoothie, mango smoothie bowl, mango, coconut and dragon fruit smoothie or raw coconut macadamia mango cheesecake. But today, it’s all about these coconut chia mango popsicles.

Coconut Chia Mango Popsicles
Description
Ingredients
- 13.5 oz can full fat coconut milk
- 2 tbsp chia seeds
- 1 tbsp maple or honey
- 1 tsp vanilla extract
- 2 mango, peeled, seed removed
Instructions
- Whisk together the coconut milk, chia seeds, maple and vanilla extract in a mixing bowl. Place in the refrigerator for 30 minutes or more.
- Add the mango to a food processor and pulse several times to make a puree.
- Fill the molds of a 10-serving popsicle maker by alternating the mango puree and coconut chia mix. Add popsicle sticks and freezer for at least 2 hours.

Can you use home made coconut milk instead of canned?
For this recipe, it’s better to use a canned version for extra creaminess.

Hi Amy – one medium mango is usually about 2 cups of fruit. So I’d just eyeball it from there. :)
A great idea here in mango season!
3-for-a-dollar mangoes beg for lots of uses while at the end of August/Sept. when it’s still hot out & these pops are just the answer. Coconut+Mango is always a tropical treat taste. If kids complain about the coconut swirl being “boring” (I think some kids will complain anything), it can be blended with a banana until smooth before having the chia added. This keeps it vegan & tropical but gives the coconut milk a little sweetness. And, because it’s frozen, the banana won’t turn the pretty white swirl to brown.
