Why Smashed PotatoEs Are My New Favorite “Bagel

Long story short, this is one of those recipes where a random thought turned into the most delicious thing ever, especially for a gluten-free gal like me. Let me tell you why I think it’ll be your new favorite breakfast idea as well:

  • It’s a great bagel alternative. Whether you’re gluten-free or not, smashed potatoes are the perfect crispy golden base that can be seasoned with a variety of herbs and spices. But a sprinkle of my everything bagel seasoning gives it that unmistakable bagel flavor that’s seriously so good.
  • The world is your oyster for toppings. Treat this recipe like an open-faced bagel or piece of toast. Schmear a spread, add fresh-cut vegetables, top with eggs or smoked salmon, you name it. I’ve got delicious ideas further down in this post.

Smashed Potatoes Lox Bagel Ingredients

  • White Potatoes: Although you can also use red potatoes, white or yellow potatoes are best for a crispy, creamy, and starchy base.
  • Everything Bagel Seasoning: I’m a big advocate for homemade seasonings, and this one is incredibly easy to make.
  • Classic Lox Toppings: The most delicious combination of cream cheese, smoked salmon, sliced red onions, shaved cucumber, capers, and fresh dill.

How To Make Smashed Potato Bagels

Boil, drain, and cool the potatoes. Place the potatoes in a pot and fill it with enough water to cover the potatoes by an inch. Salt the water and bring the pot to a boil over medium-high heat. Cook the potatoes until fork-tender, about 15 minutes. Then, drain the potatoes in a colander and let them cool to the touch, for about 10 minutes.

Season and smash. Transfer the potatoes to a mixing bowl and stir with the everything bagel seasoning. Place the potatoes on a baking sheet and use the bottom of a glass to smash them down. Thinner potatoes are more crispy but are more likely to break apart. Aim for a height of about ½-inch. Bake the potatoes for 25 to 30 minutes at 450°F (230°C).

Add the toppings. Add a schmear of cream cheese and pieces of smoked salmon. Then top with sliced red onions, shaved cucumbers, capers, and fresh dill. Voila!

More Bagel Topping Ideas

  • Tomato Cucumber Bagel: Add a schmear of cream cheese, a layer of sliced heirloom tomatoes, cucumbers, and top with pickled red onion and a squeeze of lemon juice.
  • Spicy Avocado: Add sliced avocado or spread a dollop of guacamole, then add a fried egg or poached egg on top, with a sprinkle of red chili flakes.
  • Egg Salad: Make a batch of my fresh egg salad and dollop a spoonful on top. Then add some fresh herbs like chopped parsley and alfalfa sprouts.

Smashed Potatoes Everything Bagel with Smoked Salmon

  • Boil the potatoes. Place the potatoes in a pot and fill it with enough water to cover the potatoes by an inch. Salt the water (I use about a tablespoon of kosher salt). Bring the pot to a boil over medium-high heat, then cook the potatoes until fork-tender, about 22 to 25 minutes.

  • Drain and cool. Drain the potatoes in a colander and let them cool to the touch, about 10 minutes.

  • Season and flavor. Preheat the oven to 450°F (230°C). Transfer the potatoes to a mixing bowl, then add the oil, and everything bagel seasoning. Stir to fully coat the potatoes in the seasoning.

  • Smash the potatoes. Place the potatoes on a small baking sheet and use the bottom of a wide-bottomed glass to smash them down. Aim for a height of about ¾-inch. Bake until the potatoes are lightly golden on the top, about 25 minutes.

  • Top the potatoes as bagels. Once the potatoes have cooled a bit, spread some cream cheese on top, top with smoked salmon, a few thin slices of red onion, some capers, and a few small sprigs of fresh dill.

Lisa’s Tips

  • For extra crispy smashed potatoes, here are a few tips to try. First, smash them down to an even thinner potato. Be forewarned that they’re more likely to break apart, but at least they’ll be super crispy! Second, let your smashed potatoes air dry for another 5 to 10 minutes after smashing them on the baking sheet. Third, brush the smashed potatoes with more olive oil or melted butter before baking them. 
  • You can make these in the air fryer by air frying the smashed potatoes at 400°F for 12 to 15 minutes or until fork tender.
  • Make this Whole30 friendly by omitting the cream cheese or swapping it with guacamole.

    1. Yes, you could swap those in. You’d just have to find smaller potatoes or slice them into thick rounds and not smash as hard.
