Smooth and creamy Vitamix soup recipes can be enjoyed year round! They’re cozy, warm (most of them), easy to make and healthy.
Even better, these recipes use a wide range of fresh, seasonal ingredients such as beets, cauliflower, sweet potato or butternut squash.
Soups are quite simply, some of the easiest and nourishing meals possible. You can load them up with vegetables and warm yourself from the inside out. It goes without saying that they’re perfect for the fall and winter months, but truly, they can be enjoyed year round.
How to Make Soup in a Blender
When it comes to making soup in your Vitamix blender, there’s usually two steps:
- Roast, saute, or boil some vegetables.
- Blend the hot cooked vegetables with other ingredients and liquids (i.e. broth) in the blender for a smooth consistency.
If the ingredients are already hot, it takes just one to two minutes to purée everything together. Super easy.
But if you have a Vitamix model with a soup function, you can add room temperature ingredients (assuming they don’t need to be cooked) and create a steaming-hot soup in under 10 minutes. How? The friction of the blades! Yes, the blades really can make a delicious, piping-hot soup.
You know what else the blades can do? They can intensify flavors of raw aromatics, like onion, garlic and spices. So I always recommend roasting or sauteing onion and garlic, or starting with a minimal amount, and adding more as desired.
A Few More Blended Soup Tips
I’ve made my fair share of blended soups, and in doing so, I have two important tips I’d like to share:
- Make an extra large batch: You know I’m a huge fan of meal prep, and soup is quite possible the easiest meal to freeze and store. I love to store soup in my Weck Jars or silicone Souper Cubes. They’re perfect to reheat on a rainy day or when I’m in need extra nourishment. Watch how I meal prep them on the video below!
- It’s all about the toppings: Blended soups are creamy and delicious, but without chunks or texture they can look a little boring. So jazz them up with toppings! Some of my favorites include herbs, greens, nuts, seeds, spices, creams and yogurt.

7 Healthy Vitamix Soup Recipes to Enjoy Year Round: Beet Soup

Ingredients
- 2 tablespoons avocado oil, or olive oil
- 1 yellow onion
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, peeled and finely chopped
- salt and pepper, to taste
- 3 large beets, peeled and diced (or 4 beets, if smaller)
- 1 medium parsnip, peeled and diced (approx 1 cup)
- 4 cups vegetable broth, or more for desired texture
Garnish
- coconut cream or yogurt
- parsley
- black sesame seeds
- cracked black pepper
Instructions
- Heat the avocado oil in a large stock pot on medium high heat. Add the onion and cook for 3-4 minutes, until softened.
- Add the garlic, ginger, salt and pepper and cook for an additional 1-2 minutes, until fragrant.
- Add the diced beets, diced parsnips and vegetable broth. Turn the heat to high and bring to a boil. Then reduce the heat to low, cover the pot and simmer for 25-30 minutes or until the beets are fork tender.
- Use a ladle to transfer the soup to a high-powered blender. Blend for one minute or until creamy.
- To serve, pour the soup into a bowl and garnish with coconut cream or yogurt, parsley, black sesame seeds and cracked black pepper.

How do you store leftover soup? I have been putting them into the wide mouth ball jars, but I seem to spill too much of it and am looking for other recommendations.
Hello dear I didn’t have my surgery they found something wrong with my heart so they can’t put me out and i am not willing to suffer for 2 hours with my mouth ripped open and unable to communicate if anything is wrong. My mom and I just bought your book. I kept sending my mom your links for the past few years so she could have healthy recipes but she is elderly and she never clicked on them. I am with my mom now and showed her your youtube channel and she got so excited. She said she loves your recipes and told me to buy your book. We got it and we absolutely love it. Some of these soup recipes nearly fill up a 64oz container (with extra space needed for blending), so likely won’t work in a 48oz container.

I normally just reheat the soups via the microwave! Or you can re-boil it in a pot if you’d like.

We made the beet soup, carrot ginger, and roasted butternut squash soups last week. I loved the butternut squash one and the carrot ginger one was really good too. The beet one turned out fine but I felt like I could have added more ginger or something else. It definitely had a root vegetable flavor that was a bit too earthy for me, but it was a good alternative for trying something different.
That’s great that you gave all those soup recipes a try Emily! Carrot ginger is always my personal favorite, and you could certainly add more ginger to the beet one next time. :)
